Cajun Style Stuffed Peppers

My favorite thing about stuffed peppers is that you can fix them in ANY way you like, and no matter what you choose, you will end up with a delicious, filling dinner! You can use Sausage, Beef, Bison, or Lamb! We like fixing them in a few ways in our house so that I will share my favorites. 

Ingredients

  • 8 Bell Peppers

  • 1 lb Ground Meat of your choice, I use Pork or Lamb Sausage

  • 1 Sweet Potato, diced and roasted

  • 1 can Diced Tomatoes

  • 1 box of Dirty Rice

  • 1 block Garlic & Herb Boursin Cheese

  • 1 block of Colby Jack Cheese, shredded

Directions

  • Begin by peeling your sweet Potato and cutting it into cubes. 
  • Spread pieces onto baking sheet and roast in the oven at 374-400 degrees until soft and tender, around 20-30 min. Set aside.
  • Prepare your box of rice as suggested on the box and set aside, then brown your meat in a skillet until fully cooked! 
  • Place softened peppers into 9-13 casserole dish. 
  • Combine all your ingredients in a bowl and stuff your peppers! 
  • After each spoonful, mash your mixture down slightly into the pepper. This will ensure that each one is very full and packed with flavor!
  • Top with your shredded Colby Jack cheese and bake in a 350 degree oven until your cheese is melted and slightly bubbling! 

Notes

  • For any way you choose to fix your stuffed peppers, you want to slice the tops off your peppers, remove the seeds from inside and boil the peppers in a large pot for about 5-10 minutes. This will soften them and shorten your overall baking time once they are stuffed!
